What you’ll need
Sautée your zucchini and half a shallot in pan in 1 tsp ghee until lightly softened.
Transfer mixture to mixing bowl. Add one egg, 1/4 cup mozzarella & S&P
Mix to combine.
Place a scoop on waffle maker. Cook until firm.
Too easy!! Low carb and veggie filled waffle option!
Top with herbed Greek yogurt!
