Zucchini Cheese Pockets W/ Marinara Sauce

Homemade Marinara Sauce, or 1 jar of prepared marinara sauce.

Three Cheese Filling: Add 2 large egg into 1 cup ricotta cheese. Mix briskly.

Add 1/3 cup mozzarella/ Italian & 3 tbsp.grated parmesan. 2 tsp.dried Italian Seasoning. Mix well.

Salt & pepper to taste. Stir to mix well. Set aside for filling.

Add marinara sauce to the bottom of a 9 -inch round or square pan. Recipe makes 2 pans.

Pre-heat oven @ 375- degree.Thinly slice thin zucchini into thin wide ribbons about 6-8 inches long.

Arrange 4-5 slices into a pinwheel. Add 1-2 tbsp.of the three-cheese filling to the center.

Fold zucchini strips over each other to form a pocket. Add 10 -12 pockets to each pan.

Sprinkle w/ 1/2 cup grated Romano cheese. Cover w/ aluminum foil and bake for 20-30 minutes.
