Zucchini Bread w/ Double Chocolate

2 large eggs,1/2 cup vegetable oil,1/4 cup maple syrup,2/3 cup brown sugar & 1 tsp.vanilla extract.

Whisk briskly to mix in. Set aside.

1 tsp.baking powder, 1/2 tsp.baking soda, 1 tsp.baking powder & 1/2 tsp. Espresso powder (optional).

Add 1/4 cup cocoa powder. Mix in and set aside.

Grate Zucchini to make 1 1/2 cups shredded zucchini (240g). Set aside.

Add the dry ingredients to the liquid mixture. Gently stir to mix.

Add 1 1/2 cups shredded zucchini & 1 1/2 cup chocolate chips (255g).Mix all together. Don’t over mix

Make parchment sling for the baking pan. Fill the baking pan w/ the mixture. Fill half of the pan.

Baked in a pre-heated oven @ 350 degress for 55- 60 minutes.
