Zucchini Applesauce Bread with Oat Streusel

Line a loaf pan with parchment and spray with non-stick or lightly butter.

Streusel: 1 C flour • 1/2 C oats • 1/2 C brown sugar • 1/2 C walnuts • 1/2 C butter • 1/2 tsp salt

Makes a double batch & plenty for 2+ loaves. Freeze any extra to use with future baking.

Dry mix: 1 3/4 C flour • 1/2 tsp salt • 1 tsp baking soda • 1 tsp baking powder • 1 1/2 tsp cinnamon

Wet mix: 1/2 C butter • 1/2 C white sugar • 1/2 C brown sugar • 2 eggs.

1 tsp vanilla • 1/2 C applesauce • 1/4 C plain yogurt or sour cream

Add dry mix. Beat until incorporated but try to not to over-mix.

Fold in 1 1/2 C shredded zucchini. Shredded apple is also amazing. Or 1/2 & 1/2.

Fill loaf tin • generously top with streusel • bake 350f about 45-50 min or until done.

If needed, tent with foil to prevent over browning. Enjoy!
