Dice russet potatoes to 1/2 inch rounds
Add baking soda & cook for 7-8 mins.
Place sheet pan in the oven bottom rack and warm up to 450F to create a hot plate surface
After boiling, simmer for 1 min.
Set potatoes aside to drain. Make rosemary thyme oil.
Toss the potatoes vigorously with infused oil.
Place potato rounds over the Sheehan in one layer and bake!
450F 20-25 mins. Bake the flip side another 20 mins.
Salt, pepper, chives. They are crispy outside and creamy inside!
