Vegan Stuffed Peppers W/ Plant Based Protein

While rice is cooking, saute 1/2 lb. each of plant-based sausage & plant-based burger. Until brown.

Add 1 diced medium onion, 2 garlic cloves. Saute until fragrant.

In a bowl, to the sausage, add 2 cups Italian style stewed tomatoes, 2 cups cooked wild rice.Mix it.

1 cup of grated Italian cheese. ( For vegan use vegan cheese or omit the cheese). Mix it evenly.

Prepare 4 bell peppers for stuffing. Cut off the tops and remove the membranes and seeds.

Place them upright in a greased baking dish.Stuff each pepper with 1/4 of the mixture.

Add 2 tbsp.of grated Vegan or mozzarella cheese.Cover w/ another baking dish.Microwave for 15 min.

Uncover and bake another 15-20 min.at 350-degree.
