What you’ll need

Organic Sweet Potato
1/2 tsp
Garlic
1/2 tsp
Himalayan Pink Salt

Puy Lentils (pre- cooked)

Black Pepper

Fresh Parsley
1/2 a tin
Tin Of Chopped Tomatoes

Fresh chopped fresh chillies
Ingredients - 4 sweet potatoes, 1/2 can of tomatoes, 250g puy lentils, parsley, garlic and chillies

Take the onion and dice it into medium sized pieces.

Peel and chop the sweet potatoes and place in a pan of water and boil for 12-15 mins until soft.

Take the chopped onion and fry lightly in vegetable oil.

Chop up 3 chillies and add them to the fried onions.

Add a sprinkling of pink Himalayan salt.

Add a sprinkling of coarse black pepper.

Add half a tin of tomatoes to the fried onions and cook on a medium heat for 5 minutes.

Add 1 packet of pre cooked puy lentils to the onions and tomato mix and cook for a further 5 mins.

Add 1/2 a teaspoon of garlic and continue cooking for a couple of minutes.

Place the cooked lentil mix into 2 mini oven proof dishes leaving space for the sweet potato.

Once the sweet potato has cooked remove from the heat and drain.

Using a fork mash up the sweet potato.

Put the dishes onto a baking tray and place in a preheated oven on 180 C for 25 minutes.

Remove from the oven and top with a fresh parsley and serve with a green salad.
