Add the tofu, dry mix, miso paste and liquid flavourings to a high speed food processor

Blend until 3/4 of the tofu has become a smooth paste

Decant into a bowl & use your hands to break up the larger pieces of tofu. Leave to set for 5 mins

Set a sieve over a large pot of water, ensuring the waterline isn’t above the sieve

Place 1/8th of the mixture into a small piece of baking paper. Roll up tightly

Roll the sausage in foil, pinching the edges from outside in before twisting and securing

Place the lid on and put the sausages over a medium heat. Cook for 45 minutes to 1 hour

Unwrap the sausages and allow them to steam dry

You can eat them as is or brown them in some olive oil over a high heat
