What you’ll need
5 tortillas
Siete grain-free tortillas (almond Flour)
½ onion, finely chopped

Green Tomatino

Bunch of leaves

Canned Black Beans
1 clove of garlic
1/2 Chopped Onion
Roast 1 green tomatino, Pablano peppers, half an onion

Add in the roasted mix, handful of fresh coriander and salt. Blend

Blend blend blend

Blend to a fine paste

Take couple of king oyster mushrooms and cut them in half

Cut them in half

Shred them into thin strips

This is how your shredded mushroom should look

Chop half an online and cut some garlic into small pieces

In a pan add some avocado oil and sauté the onions and garlic

Add in the mushrooms

Add in some freshly ground black pepper

Add in some black beans and salt

Use 5 almond flour tortillas

Spread some of the mushroom mix on the tortilla and roll it up

Fill up the other tortillas with the mix

Add some of the green sauce in a baking dish

Spread the sauce

Assemble all the filled tortillas in the dish

Pour the remaining sauce over the tortillas

Shred some vegan cheese

Bake at 350 for 25-30minutes. Broil for 5 minutes

Top it with some avocado, tortilla chips and jalapeños
