The Base - Blend in a food processor, press mixture into dish & refrigerate for 1 hour.

Follow these steps to make the Cheesecake.

Blend the tofu, maple syrup and vanilla extract for 4 minutes until smooth.

Stir the tofu mix with the coconut cream and corn flour.

Stir the matcha powder, warm water and lime juice together. Then add this to the tofu mix.

Mix together and pour on top of your set base! Refrigerate overnight.

Make the Festive Compote next!

Simmer 125g blueberries, 3 tbsp caster sugar, 125g raspberries, 1 tsp of water in a pan for 5 mins.
