What you’ll need
Spinach
Red Onion
Salt + Pepper To taste
Greek Yogurt Cream Cheese
Coconut Milk
Minced garlic cloves
Parmesan Cheese
Start by steaming your fresh spinach. I used 3 bags!

Let spinach drain and cool! This is 30 ounces cooked! #wilt

Meanwhile sautée your garlic & onion with a bit of olive oil

Once spinach is cooled and drained, chop up.

Add 1/2 cup Greek yogurt cream cheese & the coconut cream from can (not the watery stuff)

Add your spinach & garlic onion mixture to coconut milk & cream cheese on low heat

Add your Parmesan, Romano or Asiago or all 3! M
