Slice 1 red onion very thinly (knife or mandolin).

Add onions to a jar that you have a top for.

Use Apple Cider Vinegar (or white wine vinegar)

Fill 3/4 jar with vinegar and 1/4 jar with warm water.

Add 1 tsp salt and a little pepper + any spices you like.

I also added garlic + jalapeño for fun.

Cover jar and mix it all together. Let it sit for a few minutes out and then refrigerate.

Eat in the next 3 weeks on tacos, salads, sandwiches, breakfasts, anything really. So good.
