Core the fennel and remove outside layer if needed.

Thinly slice the fennel.

Thinly slice the onion.

Save the fennel fronds.

Preheat pot over medium heat. Add olive oil, fennel, and onions.

Cook until soft and lightly browned and add garlic.

And crushed red pepper or one of our Tear-Jerker pepper blends.

Carefully add the mussels.

Add the wine or stock, stir, and cover. Cook for 8-10 minutes or until the mussels open.

Once cooked, remove any unopened mussels. Season with salt, pepper, lemon juice and fennel fronds.
