Spring Onion
Feta Cheese 250g
Loose Bottom Dish/ Cake Tin 23cm

Leeks
1 bag Baby Spinach
100ml
Extra Virgin Olive Oil
3 cups
Curly kale
5- 7 sheets
Filo Pastry Sheets

Heat oven to 190/ gas 5

chop and fry the leeks in a little oil, medium heat until soft.

Whisk the eggs

Crumble and add the feta, then spring onions to the egg

Add the leeks to wilted greens, stir, and then add the egg mixture

Brush a sheet of filo pastry with oil, and turn over so both sides are covered

Add the filling along the length of the filo sheet and form a spiral around a circular dish

When done, place in oven until golden brown, approx 40mins
