Cook 2-3 large sweet potatoes.
Peel cooked sweet potatoes and place in food processor.
Add 1/4 cup of your favorite salsa.
Add the juice of one fresh lime.
Add 1/2 a block (or less) of grated pepper jack cheese.
Add 1 Tablespoon (more or less) of sriracha for extra spice.
Blend in food processor till smooth.
Serve with vegetables or whole grain crackers.
