What you’ll need

Egg

Red Onion, Chopped
1 tablespoon
Maple Syrup
1 tablespoon
Toasted Sesame Seeds

Portobello Mushrooms, Chopped
1/2 to 1 teaspoon
Chili Paste (Sambal Oelek)
1/8 teaspoon
Kosher Salt, Ground
1/2 cup
Water
1 package
Ramen noodles
1/2 cup
Chicken Broth
1 tablespoon
Vegetable Oil

Red Radish, Sliced (optional)
Prepare egg: soft boiled, fried, or poached. Whichever you like!

Heat vegetable oil in a skillet on medium heat. Add mushrooms and salt. Add onions. Cook 3 minutes

Add sesame seeds and stir to combine. Cook 1 minute.

Add chicken broth and chili paste (1/2 teaspoon if you prefer less spicy). Increase heat to high.

Add Ramen. Stir to distribute evenly.

Optional: Add 1/2 packet seasoning mix. Add 1/2 cup water. Boil 2 minutes.

Reduce heat to simmer. Add maple syrup. Stir to combine.

Turn off heat. Add 1/2 of the ramen to a bowl. Carefully ladle/spoon 1/2 broth into bowl.

Top with egg, additional sesame seeds and optional radishes and fresh parsley or cilantro.
