Garlic Chilli Paste

1 bottle
Adobo Sauce
Buy
1 Tsp Of Sea salt
1 rack
Rack Of Lamb
Half bag
Baby Potatoes
Ground Black Pepper
Choice Of Spices - Cuban Mojo

Duck Fat
Score the skin. Coat with garlic chilli paste, Cuban mojo spice (or whatever you have), salt.

Heat oven to 180C. While waiting, cut the baby potatoes in half.

In a pan, add the potatoes. Pour a bottle of Adobo sauce. Par boil for about 10 minutes.

In a baking pan, add duck fat and heat in oven until very hot.

Add par boiled potatoes in a hot baking pan with duck fat and coat. Return pan to oven and cook.

Brown the lamb skin side in a pan before putting in the oven for about 15 minutes.

When lamb is cooked, rest for about 10 minutes before cutting.

Serve with adobo roast potatoes, carrots, buttered leeks and mushrooms.

Spice it up some more with a dollop of garlic chilli paste on the side. Enjoy!
