Sourdough Sandwich Bread

Combine 1 1/2 tsp yeast and 1 1/4 c warm water in bowl of stand mixer. Let sit 5 minutes to dissolve

Add 2 cups sourdough starter.

Stir until starter is mostly dissolved.

Add 4 to 4 1/2 cups flour.

Add 1 tbsp kosher salt.

Mix until everything is combined.

Knead work dough hook 8 minutes, adding flour if needed.

Take dough out of bowl.

Film bowl with a little bit of oil. Return dough to bowl, turn to coat in oil. Cover, let rise 2 hrs

Dough should be doubled in bulk.

Lightly flour your work surface and turn dough out onto it.

Divide in two.

Shape each half into a loaf. Let rest 20 minutes.

Place each piece of dough into a greased loaf pan. Cover. Let rise until starting to puff over rim.

Heat oven to 450. Slash tops of loaves, bake 10 minutes. Lower heat to 400 and bake 25 minutes more.

Remove from oven.

Slide loaves out of pans and let cool completely on cooling rack.
