Sourdough Discard Scallion Pancakes

Add sesame oil, ginger, salt, and pepper directly to your discard starter. Stir well.

Swirl sesame oil in a hot skillet. Pour discard directly into skillet.

Top with thinly sliced scallions and sesame seeds.

Cook until the edges bubble and cook through. Then flip.

Here’s a close up of the bubbles you should see. They’re not as pronounced as in regular pancakes.
Cook a few more minutes then remove to a plate.

Serve with soy sauce on the side for dipping.
