What you’ll need

Large onion
1 cube/pot
Veg stock
1
lemon
250g
Red lentils
1 tbsp
Turmeric
small handful
Chopped Coriander
1 tbsp
Cumin
400ml
1 Can coconut Milk
Add lentils and water to a saucepan

Add turmeric, stock and 1 can of coconut milk, stir and simmer for 30 mins

Chop onion into small cubes

In a frying pan, add a little oil and cumin seeds, fry for 2 minutes

Add the onion to the cumin and return to the hob for 15 mins, or until soft and browned

Add the onions to the lentils and leave to infuse for 10 minutes before stirring.

Drizzle with yoghurt, squeeze of lemon and chopped coriander, served here with pakoras
