Start by searing your sweet onion & garlic in pan until caramelized with a tbsp grape seed oil

Add a can of coconut milk and 1 & 1/2 tbsp of red curry paste

Optional: add a splash or two of your favorite red or white

Add strips of bell pepper & 3-6 Thai chili’s that have been cut down the middle to release the heat!

Add ginger, cumin, chili spice & garlic powder while cooking on low

Sear your shrimp LIGHTLY!! They will continue to cook within the curry sauce

Add your seared shrimp to your sauce, top with cilantro, chives & a fresh squeeze of lemon
