Trim chicken breasts into a rectangle.

Cut in half lengthwise.

Toss chicken cubes in spice mix.

Thread chicken on skewers and place on foil-lined baking sheet. Roast 20 min at 425F.

Cook farro in boiling water for 10 minutes.

Drain farro and rinse with cold water to stop cooking and cool.

Chop lots of fresh parsley.

Combine all in a bowl and drizzle with dressing.

Finish with a squeeze of fresh lemon. Serve with chicken skewers.
