This recipe makes about 3 cups. Can be scaled up & frozen in batches.
1# tomatillos • 1 med onion • 1-2 poblanos (or jalapeño) to taste.
Cut into chunks. Roast 400f for 10-15 min or until slightly browned. You can add garlic, too.
This is just right. Or you could broil, grill, boil, or steam.
Aromatics: 1 C cilantro, S&P, 2 tsp cumin, fresh garlic (or your roasted), 3 T fresh lime juice.
Really important to taste it & adjust. I added 1/2 tsp of sugar to balance the tart. Perfect.
Dip, sauce, burritos, quesadillas, huevos rancheros, grilled things, so many ways to eat this.
