Sausage with Mustard Onion & Potato Pear Mash

Add potatoes to cold water. Salt and bring to a boil.

Heat oil in skillet and add sausage.

Cook sausage, turning regularly.

If skillet dries, add a splash of water.

Brown the rounded sides by pushing them against the sides of the pan.

Once browned remove sausage to a plate and wipe out pan.

Wipe pan. Heat oil in same skillet and add onions.

Add salt and freshly ground pepper. Cook until softened.

Add tarragon, brown sugar, vinegar and grainy mustard. Return sausage, cover and cook 10 minutes.

Remove lid, increase heat and cook uncovered.

Keep cooking, stirring, as liquid cooks off.

Cook until all the liquid has evaporated.

Meanwhile, once potatoes are just about done, add pear and cook 1-2 minutes more. Drain.

Return drained potatoes and pear to pan and mash.

Add butter, milk and mustard.

Add salt and pepper, to taste.

Serve sausage and onion on top of mash. Garnish with a bit of tarragon.
