Roll out your pastry into a large rectangle ensuring it’s well floured and not sticking.

Trim the rough edges and divide the dough into 2 or 3 pieces (2 for big sausage rolls, 3 for small)

Spread the sausage mixture to the right of each piece, leaving space for rolling and sealing

Use egg wash on the empty side of pastry and roll over to seal. Place the log seam side down

Repeat the process, using a sharp knife to slice each log into individual sausage rolls

Brush liberally with egg wash and sprinkle with sesame seeds. Bake in 200C 400F oven for 20-30 mins
