1 pound
Clear Springs Foods Rainbow Trout
1/3 cup
Plain Low-fat Greek Yogurt
1 Cup Broccoli
1 medium
Yam
3 tablespoons
Old Fashioned Oats
1/2 cup
Shredded Cheddar Cheese
1/2 Tsp Paprika , 1Tsp Garlic Powder, 1Tsp Onion Powder Salt / Pepper TT
Place rainbow trout filets on parchment paper. Bake at 425 degrees for 12 minutes.

In small mixing bowl combine yam, Greek yogurt and oats. Add salt, garlic, paprika and onion powder.

Remove trout from oven and shred with a fork to remove skin.

Add chopped, thawed broccoli to mixture.

Add in flaked trout and shredded cheese. Lightly mix together.

Spray muffin tin with non-stick spray. Place 2 tablespoons of trout mixture in each cup.

Top each cup with shredded cheese.

Bake in 425 degree oven for 15 minutes, until lightly browned.

Remove from muffin tin and serve or chill for later!

These bites are great warm or cold! Throw in a container and you have a fabulous cold lunch!
