
Gather your ingredients

To pan, add EVOO, garlic and red chili flakes

Once everything is sizzling, add raisins (trust me)

Sauté until they puff up (60 sec)

Add your veggies, salt, 1 cup water and cover; cook until mushy (10-15 min)

When mushy and water has evaporated, add crushed tomatoes and half a can of water (14 oz)

Heat through and blend for 2 min, until smooooooth

Add almond yogurt - this is my fav!

Season to taste and stir well or blend for 30 sec to incorporate

Serve with large chunk of bread!
