I washed my baby pumpkin cut the top and put it in the oven for about an hour (till it was cooked)

It made a 1 1/2 cup of pumpkin purée, put it in the blender with 4 eggs and 1 1/4 cup veg. oil

Added 2 cups of sugar . This was it for my wet mixture for now

In a mixing bowl put 3 cups of flour, 2 tsp cinnamon, 1/2 tsp nutmeg, 1/4 tsp ginger powder

Mix and add 3/4 tsp salt, 3 tsp baking powder and 1/2 tsp baking soda

Mix your dry and wet mixtures, don’t over mix

Add half a cup of butter milk (if you don’t have any, mix half a cup of milk & a squeeze of lemon)

+ walnuts, if you have raisins they also go well.

The consistency will be sticky & thick, that’s perfect!! Grease your pan and pour it in

Put it in a preheated oven at 350’F for 75 minutes.

This can be served with frosting, but we enjoy it as is. Try it!! Tastes amazingly fluffy and moist
