Cut a 3 pound pork loin into 1 inch sections.

Preheat a heavy pot to medium-high. Add 1 tbs olive oil and sliced pork loin.

Brown each piece of pork.

Add 1 tbsp of chili powder, 2 tbsp of onion powder, 1 tbsp cumin, and 2 1/2 cups of beef stock.

Cook covered on medium for 1 hour. Cook uncovered for an additional 30-40 minutes.

When the meat is tender and cooked through, use two forks to pull pork into shreds.

Serve with red bell pepper, onions, black beans and corn.
