What you’ll need
Garlic Chilli Paste

Whole Chicken
2 tsp
Ground Black Pepper

1 Tsp Of Sea salt
Spatchcock the chicken and slit the flesh in several places to help get the flavours in.

Season the underside with salt and pepper.

Turn the chicken over and do the same.

Rub the garlic chilli paste all over the chicken. Leave at least an hour or overnight.

Heat oven to 180C. Cover pan with foil. Place in the oven and roast 1 hr. Remove foil after 30 mins

When juices run clear, chicken is cooked. Rest before carving.

Serve with roast potatoes, greens and honey glazed carrots. Enjoy!
