Add flour, brown sugar, baking powder, cinnamon, nutmeg, allspice, and salt. Mix together.

Add milk, pumpkin, ginger, egg yolks, then whisk. Add melted butter and whisk again thoroughly.

Add liquid ingredients to dry ingredients and stir just until combined.

Whisk egg yolks (by hand or with a mixer) until they form stiff peaks.

Add 1/3 of the egg whites and mix gently. Add remaining egg whites and fold until no streaks remain.

Add waffle batter to preheated waffle iron and close. Cook until heat sensor pops.

When cooked, carefully open and remove waffles. A fork to help pry them up helps.

Serve with whipped cream or syrup or both.
