Rinse and drain 1 cup quinoa, then soak in cool water for 15 minutes.

Drain soaked quinoa and add to a medium pot. Add 2 cups water and bring to a boil. Cover and simmer.

Simmer for 10-15 minutes, until water is absorbed. Remove from heat and allow to sit for 5 minutes.

Save in your fridge for up to four days!
