Add sliced onions and olive oil to a large skillet set over medium heat

Cook onions until lightly caramelized, about 10-15 minutes. Transfer to a large bowl

Cook garlic and red pepper until soft, about 3-5 minutes. Transfer to the same bowl as the onions

Over high heat, cook okra until beginning to brown. Transfer to the same bowl

Add pomegranate molasses, s&p. Stir to combine

Transfer to a baking dish, cover and bake at 350F/180C until soft, about 1.5 hours (or slow cooker)

Serve at room temperature with pita bread next to your favorite salad or protein. Enjoy!
