Start with the oil,bay leaves then chicken and cover it

Flip the chicken and give it a great light golden color

Add water and cover it , let it starts boiling

Remove the top and make sure you get it all

Let it boil and low the heat to medium, then add black pepper

Now start making a medium ball from the dough using some flour as needed

Start flatten the ball to as thin as you can

Start baking the SAJ,you can even buy it or replace it with pita bread or tortillas

The chicken is fully cooked

Filter it from the water and save 1 cup of the broth for later

Start cutting the chicken into small pieces and remove the bones

Mince the onion as small as you can

Now I have 4 cups of chicken and 4 cups of minced onions , it should be equal

In a pot add the olive oil then the onions,garlic powder,black pepper and salt then stir them

When the onions start softened add 1/4 cup of sumac and stir it

Add the chicken then 1/4 cup of sumac and the saved broth and stir them

Add the chili and cover it till the onions fully cooked

And ready , let’s start stuffing

Some olive oil and sumac,brush the pan and stuff the Saj and roll it

Continue stuffing , then brush the top of the rolls with the olive oil and sumac

To the oven at 450f until it’s golden and crispy

And ready , so hot yummy and flavorful
