Moroccan Spiced Lentil Soup (veggie loaded)
Heat oil in pot & sausage, sautéing it until brown breaking it up with spoon

Add veggies(carrot, celery, sweet potato, squash)& onion and season with salt & pepper

Add in spices (cinnamon, cumin, paprika,chili flakes), garlic & stir well

Add in the chopped tomatoes

Stir in the lentils

bring to a boil then reduce to a simmer and cover and cook until lentils are tender

Stir in the kale and simmer uncovered until kale is softened.

It’s hearty, filling and full of warming spices and veggies

Serve with crusty bread,a dollop of yoghurt, a squeeze of lemon juice and with some chopped parsley
