How toMjadara - Rice & lentils

Measure a cup of lentils, wash/rinse several times

Let them simmer for about 5 minutes then throw out the water.

Fill with water again, enough to cover. Keep on H heat until it boils then turn to M to L heat.

Add 1 Tspn salt, 1/2 a Tsp black pepper & cumin. If your cup is smaller, decrease the amount.

Cover your lentils and wait for them to cook. While you wait, prepare your onions (2)

Measure 1 1/2 cup of rice. I used Basmati rice. Wash & soak in a bowl with water. Set aside

Fill a small ladle (soup spoon) with veg. oil and another one with olive oil

Once your oil heats up, put your onions in on M to H heat. Leave to caramelize + Check your lentils

If most of the water is gone & they’re not cooked yet, add boiling water. When 90% cooked turn off

Wash & drain the water from your rice. To cook: 1 cup basmati rice needs 1.5 cups of water.

Check how much water is left in your lentils. Add however much more you need to cook the rice.

For 1.5 cups of basmati rice. I needed 2.25 water. Keep on H heat until it boils. Add salt if needed

Continuously check onions & lentils. When water boils, leave for 2min then put on L’est heat& cover

When onions are about ready, mix half of them in your rice & lentils (mjadara). Let them cook

Mjadara should not be dry, it should be abit mushy from the added caramelized onions.

When remaining onions are caramelized turn stove off. Top mjadara with them when serving.

Several combos go great with mjadara! Fatoush, yogurt salad or pickles. I made a quick fatoush.
