What you’ll need
Eggplant
Turbinado “Sanding” Sugar
Miso
Ground Ginger
Rice Vinegar
1/4 Cup Mirin
Chop up your eggplant.

Add 1 tbsp ghee or butter. Salt & pepper. Cook for 15 minutes on 350!

While eggplant is roasting.. MISO happy to show you MISO! Add 1/4 cup white wine (or sake) & 1 sugar

Boil for 20 seconds. Turn heat to low. Add ground ginger, miso paste & rice vinegar

Take your roasted eggplant and drizzle with miso glaze! Top with fresh lime, scallions & cilantro!

Sprinkle with sesame seeds and wala!
