Start by drying your scallops with paper towels. Removing moisture gives them that sear!

Season scallops with salt, pepper and garlic powder.

Get your pan nice and hot! Cast iron works best for sear. ( medium high heat. Add butter

Add scallops to buttered hot pan. Add sprig of rosemary (optional)

Cook for 2 minutes and then flip! Cook for another 2 minutes; you’re done!

Enjoy! Serve with risotto or sweet potato mash!
