Mini Coconut Cupcakes With Coconut Frosting

Vanilla Extract

Coconut Cream
1/2 cup
Shredded Sweetened Coconut
4 cups
Powdered Sugar
1 cup
Unsalted Butter
2-3 tablespoons
Coconut Cream
Pinch
Salt
Prepare the cupcakes first.

Combine the flour, baking powder and 1/4 teaspoon salt in a small bowl. Set aside.

Cream together the butter & sugar in a mixer. Add eggs, vanilla & slowly add flour & coconut cream.

Stir in 1/2 cup coconut. Fill each well of a paper-lined mini cupcake pan halfway full with batter.

Bake at 350F for 12-15 or until a toothpick inserted into the center comes out clean. Allow to cool.

Wash the bowl. Prepare the frosting while the cupcakes are cooling.

Add powdered sugar, 1 cup butter, 2-3 T of coconut cream & salt to the bowl. Beat on med to blend.

Frost the cool cupcakes and decorate as desired. Enjoy!
