Middle Eastern Bread Pudding (Aish El Saraya)

Toast bread in the oven until golden brown

Make the simple syrup using sugar, water & a squeeze of lemon - mix. Simmer on med heat for 10 mins

Combine cream, cornstarch & sugar. Mix well then continue mixing on med heat 10 mins until thick

Once thickened, add 1 tbsp rose water and allow the Ashta (cream) to cool to room temp

Tare up the bread into smaller pieces

Add to a food processor in batches and grind to form breadcrumbs

Add the simple syrup and mix well with the breadcrumbs

Form a crust in the pan. Press down using a cup

Add the Ashta on top and smooth it out

Cover with ground pistachios and refrigerate for min 3 hours

Enjoy chilled and add more simple syrup if required
