Using fresh lemons squeeze your lemon juice
Add your lemon juice, sugar & eggs into a saucepan and on a medium heat whisk until combined
Add your lemon zest and butter and whisk until your curd begins to thicken
Using a spatula stir your curd, when you have a thin layer coating your spatula you’re done!
Put your curd through a sieve to make sure it is smooth
Using baking paper cover your curd making sure it touches the top to stop a skin forming
Let cool before putting in the fridge to chill
Once chilled transfer into an airtight container and store in the fridge
