What you’ll need
1 bag Baby Spinach
1/2 tea spoon
Black Mustard Seeds
Avocado Oil (or Olive)
1/2 a cup
Heat your oil and once hot, add the mustard seeds. Allow it to crackle . Mustard seeds are optional
Add your chopped ginger and garlic. Allow it to cook for about 2 mins. Be careful and don’t burn it
Add the roughly chopped spinach . Don’t worry if it looks too much. It will shrink to about 1/5 size
Cover with a lid and let it cook for about 2 minutes. Btw, spinach usually does not need more salt.
Add the almond flour/ flakes almonds and mix well. Allow it to cook for about 3-4 mins.
And voila ❤️ An easy to prepare dish that high in iron, fibre and protein.
