What you’ll need
600g dark chocolate
450ml heavy cream
150g soft cubed butter
1 tonka bean
Set up your pastry station. Pour all your cream into small sauce pan. Scrape in one tonka bean.
Bring the cream to a boil. Pour slowly over the chocolate and allow to sit for 30 seconds
Whisk whisk whisk trying not to incorporate air.
Incorporate the butter
