What you’ll need
2 pounds
Chicken Breast
1 + 3/4 C ~ 3 small tomatoes
Organic Tomatoes
3/4 C
Salsa
3 Tbs
Olive Oil
1 packet
Spicy Taco Seasoning (Simply Organic brand)
1/8 C
Water (optional)

Crock Pot
1 Tbs
Unrefined Coconut Oil
1/4 C ~ 1 jalapeño
Sliced Jalapeño
1/2 C
Diced Red Onion
Start with a clean, empty crock pot.

Place 2 pounds chicken breast in bottom of crock pot.

Add 3 Tablespoons of Olive Oil

Add 1 Tbs of Unrefined Coconut Oil

Pour one packet of spicy taco seasoning over chicken.

Add 1+3/4 cup diced tomatoes

Add 1/4 cup sliced jalapeño

Pour 3/4 cup salsa over top of the jalapeño & tomatoes

1/2 Cup, Diced Red Onion

1/8 Cup Water (Optional) just makes for a thinner taco sauce.

Stir contents making sure the chicken is thoroughly coated in all ingredients.

Cover with lid, lock into place.

Set your slow cooker to LOW for 6-8 hours

Once done, remove lid & easily pull chicken apart!

Pair with taco shells + toppings - OR - make a burrito bowl with veggies + rice!
