What you’ll need
1cup Cooked Basmati Rice
Toasted almond & Unsweetened Coconut
Sugar To Taste
Fresh Fruit (your Choice)
1/2 Teaspoon Cinnamon
Toast your unsweetened coconut and sliced almonds in a hot pan over low heat. Stir. No burning🔥
Mix 1 cup milk, 1/8 c sugar (maybe not even), butter. (*1cup milk for each cup cooked rice.)
Add 1/2 teaspoon of cinnamon and vanilla and then bask in the aroma... stir!
Cook on medium-high heat. Stir frequently.
When the milk is pretty well absorbed, add your lemon zest and the toasted coconut and almonds...
Spoon into a dish and add fresh fruit, more cinnamon and even a little more toasted coconut!
I add fresh fruit to my pudding but you can add raisins or cranberries... whatever you like!
Enjoy it warm or cold. My Ivy likes a big dollop of whipped cream! Easy rice pudding done!
