How toMake Pawsome Vegan Cookies & Cream Ice Cream

What you’ll need
1 cup
Raw Cashews (soaked)
2 teaspoons
Vanilla Extract

Oreos or Vegan Chocolate Sandwich Cookies
13.5 fl oz
Coconut Milk
1/8 teaspoon
Sea salt
1/4 cup
Dark Chocolate Chips
1/4 - 1/2 teaspoon
Coconut oil
13.5 fl oz
Coconut Cream
2-4 tablespoons
Maple Syrup
1/4 cup
Vegan White Chocolate
Add the coconut milk & coconut cream to a saucepan, and cook on med. heat until it comes to a simmer

Carefully transfer the hot coconut mixture to a high speed blender

Add the cashews, salt, vanilla and maple syrup, and blend on high for 1 min (until smooth).

Transfer to a medium sized bowl, cover, and refrigerate for at least 4 hours or overnight.

Place the Oreos in a large zip top bag and use a heavy rolling pin to slightly crush them.

Pour ice cream base into prepared machine and begin to churn for 3-5 minutes.

Once the ice cream starts to set, add in the crushed Oreos a little at a time. Churn until done.

Transfer to a freezer safe container & top w any extra Oreo pieces. Blend slightly. Freeze 2hrs.

Melt the white & dark choc chips until smooth. Draw the faces & ears onto wax paper w a toothpick.

I like to sketch a template for a guide, but you could even use Oreos for the ears :). Let set.

Time to put it all together! Dip an ice cream scoop in warm water, dry it & scoop onto sugar cones.

Carefully add the chocolate decorations & enjoy! (To slow melting I like to freeze the scoops first)
