Get your chicken marinate seasoning ready

Add ginger, garlic & turmeric to a small bowl

Add dark soy sauce, light soy sauce, oyster flavoured sauce and sesame oil

Add sugar

Give it a good mix

Marinate chicken with the sauce for a few hours. Better overnight

Place in pot on trivet with 1 cup water. Close lid & Pressure Cook for 15 minutes

Once done, wait for 10 mins before doing a quick release

Open lid once pressure is all released

Place chicken on greased baking sheet & Broil at High for 5 minutes

While chicken broils, let’s make the rice. Rinse & drain rice

Add 3 Cups coconut milk to bowl

Once liquid in pot has been drained & disposed of safely(not in a sink),add rice,coconut milk & salt

Add 2 tsp of purée garlic & give it a good mix

Close lid, ensure vent valve is sealed & select Pressure Cook for 5 minutes

Once done, wait for 10 mins before doing a quick release

Open lid

Fluff coconut milk rice with a fork
