You’ll need 8 eggs, a splash of milk, 1/2 cup of cheese, 1 pepper, 1/4 of an onion, bread.
Chop the pepper and onion and set aside in a bowl.
Crack eggs into a bowl.
Add a splash of milk & whisk eggs a bit before mixing in the veggies. Add salt & pepper to taste.
Pour egg and veggie mixture into a greased pan or baking dish.
Bake at 300 degrees for approximately 20 minutes or until egg mixture has set.
Take out of oven and cut into 6 squares.
Lay out 2 slices of bread per egg square.
Using a spatula, place egg squares on bread and sprinkle a bit of cheese on top. Close sandwiches.
Wrap sandwiches in tin foil.
Put sandwiches in freezer. Reheat later to enjoy!
