What you’ll need
Organic Tomato Paste
Dry Sauvignon blanc
Red Snapper Filets
Fresh Chili Peppers
Chop up: 2/3 cup fresh parsley, 1 1/2 cup onion, 1 1/2 cup tomato, 3 large garlic cloves
Cut 1 1/2 lb of fish fillet in 2-inch pcs (any white fish like red snapper, halibut, cod, seabass).
Heat 6 tablespoons olive oil in large pot over medium high heat. Add onion and sauté 4 mins
Add garlic and sauté for another minute
Add parsley and stir for two mins
Turn down to low-medium heat. Add 1.5 cups tomatoes & 3 teaspoons tomato paste. Cook for 10 min more
Add 8 oz. clam juice and 1/2 cup of dry Sauvignon blanc wine
Add the fish! Bring to simmer for 3-5 mins until fish is cooked through and easily flakes apart
Add seasoning (fresh oregano, thyme and hot chilies). Use tobasco if you don’t have chilies.
Add salt and pepper to taste and stir.
Add some parsley as a garnish. Serves four people. Enjoy!
