Loaded Mashed Cauliflower

Unsalted Butter
2-3 tablespoons
Heavy Cream
1 cup (shredded, divided)
Sharp Cheddar Cheese
4 slices (cooked, crumbled, divided)
Bacon
4 tablespoons
Sour Cream
Optional garnish
Parsley, Green Onions Or Chives
Prep all your ingredients before you begin.

Add cauliflower + 2 T water to a microwave-safe bowl. Cover + vent w/ plastic wrap. Cook for 8 min.

Remove with a slotted spoon to a food processor, straining out all of the excess water.

Add the salt, pepper, garlic, butter & 1 T heavy cream. Process, adding more cream, until smooth.

Remove and stir in half of the cheddar cheese and bacon.

Transfer to a baking dish(es) and top with the remaining cheese and bacon.

Turn on the broiler and place the casserole(s) 3-4 inches from it for 2 min, watching closely.

Serve with sour cream and garnish, if desired. Enjoy!
